Why Bib Gourmand matters
Bib Gourmand is Michelin's "good cooking, moderate price" tier — under €40 in most European cities. The list grew specifically to recognize the bistro-and-trattoria culture stars overlook. The densest cities aren't the obvious tourist capitals.
Lyon
Lyon highest Bib Gourmand density in France outside Paris. Bouchon Lyonnais (the working-class fixed-price institution) is exactly what Bib was made for. Lyon has 20+ Bib entries.
Bologna
Bologna trattoria capital. Bib Gourmand here means handmade tortellini in brodo for €18 instead of €40. Trattoria di Via Serra, Trattoria Anna Maria. Lunch menus the savings sweet spot.
Lisbon and Porto
Lisbon Tasca Kome, Solar dos Presuntos. Porto O Gaveto, Caldeireiros. Portuguese tasca culture maps perfectly onto Bib Gourmand criteria.
Madrid
Madrid Bib Gourmand-decorated tapas bars and tabernas — Bodega de los Secretos, Casa Hortensia. Stronger than Barcelona on this tier; Barcelona Bibs more contemporary.
Vienna
Vienna Beisl culture (neighborhood inns) increasingly Bib-decorated. Plachutta, Steirereck im Stadtpark.
Strategy
Bib lunch menus often €15–25 in cities where dinner Bibs run €30–40. Reserve same-day or 1–2 days ahead. Star dining is the splashy companion.
