What counts as natural wine
Low-intervention winemaking — minimal sulfur, native yeasts, organic or biodynamic farming. The category exploded out of France's Beaujolais and Loire in the 1980s and now defines the style of urban wine bars across Europe.
Paris
Paris is the global capital. Le Verre Volé, La Cave de Belleville, Aux Deux Amis, Septime La Cave. Le Marais, Canal Saint-Martin, and the 11th have the highest density. Producers from Loire and Beaujolais drink themselves at these bars.
Copenhagen
Copenhagen Pompette, Den Vandrette, Manfreds — the natural-wine-and-small-plates format that defines modern Nordic dining. Nørrebro dense.
Berlin
Berlin Wein und Vinos, Cordobar, Jaja Berlin. Younger scene than Paris; prices significantly lower. Mitte and Kreuzberg base.
Lisbon
Lisbon emerging — Black Pages, Senhor Uva. Portuguese natural producers (Folias de Baco, Quinta da Pellada) on heavy rotation. Príncipe Real base.
London
London P. Franco, Sager + Wilde, Top Cuvée, Forty-Five Vintners. Strong scene; £12+ pours. Hackney dense.
Strategy
