London
London Plates (Hackney, Michelin Green Star — sustainability), Bubala (Soho — Mediterranean vegan), Mildred's. Plus Tristan Welch's vegetable-forward menus at Parker's Tavern. £45–120 vegetable tasting menus.
Berlin
Berlin Frea (Mitte) — first all-vegan Michelin-rated restaurant in Berlin (zero-waste). Lucky Leek (vegan Mexican). Cookies Cream (longest-running Berlin vegan fine dining). €70–150 tasting menus.
Paris
Paris ONA (Arès, hour from Paris — first all-vegan Michelin star in France). 42 Degrees Raw (raw vegan), Wild & The Moon. Less consistent vegan-Michelin presence than London.
Copenhagen
Copenhagen Geranium offers parallel vegan tasting (originally meat-and-vegan-versions; transitioned 2020 to vegetarian-heavy). Also Höst, Pony, Manfreds offer plant-based options at high level.
Madrid
Madrid El Atelier de Eduardo Pradera (vegetable-focused), DiverXO Pablo Plus dishes. Spanish vegan fine dining behind UK + Germany pace but emerging.
Stockholm
Stockholm Hyltberg (vegetable-focused fine dining), Adam/Albin. Nordic vegan-fine-dining still rare but growing.
Strategy
