Sternschanze vs St. Pauli
These are Hamburg's two famous post-industrial quarters and they're not interchangeable. Sternschanze is the punk-leftist quarter — stencil graffiti, vegan döner, the Rote Flora squat. St. Pauli is the Reeperbahn — sex shops, music venues, FC St. Pauli football, more tourist-aware. Both are alive past 3am.

TiedSchanze is grittier, more political, the bar scene is local-and-leftist. St. Pauli is rowdier, more bachelor parties on weekends, more music-and-bar tourism. Pick on what you want from a night out.
Quiet sleep
SternschanzeSchanze marginally — the bars are quieter than the Reeperbahn, and most are on side streets. St. Pauli's main strip is a wall of noise until 5am Friday and Saturday.
Walkability to the harbor
St. PauliSt. Pauli wins. The Landungsbrücken (harbor) and the Elbphilharmonie are 15-20 min walk. Schanze is 25-30 min from either.
Restaurants
SternschanzeSchanze is the better food quarter — Schulterblatt and Susannenstraße have density of small kitchens, vegan-and-Turkish-and-craft-pizza. St. Pauli's restaurants are mostly bar food.
Family safe
TiedBoth fine during the day. Both inappropriate Friday-Saturday nights, especially around children. Schanze is the safer choice if traveling with teens.
