Göreme vs Uçhisar
Almost everyone defaults to Göreme — it's the launch zone for the morning balloons and the closest town to the open-air museums. Uçhisar is 5 km west on a dramatic castle-rock ridge, calmer, with arguably the best cave-hotel views. Both work for a 2-3 night Cappadocia stay.

GöremeGöreme is the launch town — most balloons inflate within 1 km of central hotels. From Uçhisar you see the balloons rising over the valley but you're not inside the launch zone.

Restaurants and town life
GöremeGöreme has a real main street with 20+ restaurants, bars, and dozens of cave hotels. Uçhisar has 5-6 restaurants and feels village-quiet at night.
Walkability to museums
GöremeGöreme Open-Air Museum is 1.5 km from central Göreme — walkable. From Uçhisar it's 4 km; you'll want a transfer or rental car.
Quiet sleep
UçhisarUçhisar, decisively. Göreme has tour group churn from 5am (balloon pickup), restaurant noise until midnight, and main-road traffic. Uçhisar is silent past 9pm.
Cave hotel quality
TiedBoth excellent. Göreme has the cluster — Sultan Cave Suites, Mithra, Kelebek. Uçhisar's properties (Argos in Cappadocia, Museum Hotel) are pricier but tend toward higher-end.
